The fifth volume in the landmark Soviet serial "Biokhimiya vinodeliya" (Biochemistry of Winemaking), issued by the Bach Institute of Biochemistry of the USSR Academy of Sciences under the general editorship of two of Soviet science's most senior figures: Aleksandr Ivanovich Oparin, famed for his theory of the origin of life, and Norair Martirosovich Sisakyan, a leading Soviet biochemist later central to Soviet space-biology research. The collection gathers twenty-three research papers from across the Soviet wine-producing republics - Russia, Georgia, Armenia, Azerbaijan, and Central Asia - covering amino-acid chemistry in wine, cognac-spirit aromatic aldehydes and tannins, oxidative processes in cognac and wine maturation ("maderization"), yeast autolysis and its effects on champagne and sherry, the biochemistry of Georgian wines by micro-region, fermentation technology for berry liqueurs, and the biochemistry of hybrid and Central Asian grapevines - a comprehensive cross-section of Soviet oenological research at the height of the field's institutional development.
