A foundational Soviet monograph on the large-scale industrial maturation and storage of "vinomaterialy" - the semi-finished bulk wine produced by primary fermentation, prior to blending, ageing, and bottling - written by two leading figures of Soviet wine chemistry. Vasily Ivanovich Nilov (1899-1973) headed the chemistry department of the All-Union Research Institute of Viticulture and Winemaking "Magarach" in Yalta and founded the dominant Soviet school of wine chemistry, training more than forty candidates and doctors of science, including Georgy Valuyko, Elizaveta Datunashvili, and Ivan Skurikhin; his textbook "Khimiya vinodeliya" (co-written with Skurikhin) reached its second edition in this same year, 1967. His co-author Sergei Timofeevich Tyurin specialised in the storage and preservation of bulk wine materials, later publishing further studies on hermetically sealed reservoir storage. The book addresses a major technological shift of the 1960s: the move away from traditional oak-cask maturation toward storage of wine materials in large metal, reinforced-concrete, and enamelled reservoirs, driven by the industrialisation of Soviet viticulture and the need to manage far greater harvest volumes without tying up capital in cooperage. The authors synthesise institutional research and production experience on the relationship between oxygen regime, thermal treatment, and clarification of wine materials in these large vessels, and put forward original theoretical positions on wine ripening and on stabilising wine against the forms of clouding common in mass industrial production. Issued in a modest run of 5,000 copies for the specialist readership of winemaking enterprises and research institutes, it remains a primary technical source for the history of Soviet industrial oenology in the mid-1960s.
